Recipe: Colin's Broccoli Rabe Dish From Beat Bobby Flay

Salsa Ragu
1 teaspoon cumin
1/2 teaspoon curry powder
½ teaspoons powdered ginger
1 teaspoon paprika
1 pinch brown clove
1 pinch all spice
1 pinch of star anise
½ cup pomegranate seeds


Toast seeds in a dry pan for 1 minute
Add 1 tablespoon of olive oil
Add 1 tablespoon of pine nuts
Juice from 1 lemon
¼ cup of golden raison
¼ cup of fried apricots
½ cup of riced cauliflower
Sauté to 3 minutes
Salt and pepper to taste
Add 1 teaspoon of honey or pomegranate molasses

Blanch the broccoli rabe for 1-1/2 minutes in salted boiled water
Then shock them in ice water
Heat in medium size skillet on stove – add 2 tablespoons of butter
Let slowly brown when it becomes auburn and get aromatic
Squeeze in lemon into the butter (it’ll pop, be careful)
Salt and pepper to taste

Add chilled broccoli rabe to brown butter for 1-1/2 minutes
Salt and pepper and put on plate
Spoon over the pine nut cauliflower salsa
Garnish with pomegranate seeds
