As Seen on Fox 11: Always Be Rice

It’s getting a bit colder, so Chef Colin shares a comforting risotto recipe with roasted butternut squash, smoked bacon, peas and spinach.

There’s really no myth to risotto. It’s really just rice. You use a different kind of rice (Carnaroli) and you put the water in gradually. It’s a little more work than “regular” rice but it is so worth it!

Saute the above ingredients, then take the pre-cooked rice and add it into your pot. Add vegetable or chicken stock to steam up the rice a bit, add some heavy cream, salt and pepper and then mix it. Finish it off with some parmesan and serve.
